She approaches with a cake and an armful of flagons. "5 gold, please."

Make a perception check, everyone.

As you drink and talk, you fail to notice some suspicious figures approaching, until a voice growls from behind you. "None of you move. If you want this to be easy, you can hand over ten gold apiece. Don't make us do this the hard way."

Ilyana looks towards the source of the voice with a wink and a grin,

Pollux stealthily casts minor illusion. It's the sound of several crossbows being loaded right behind the suspicious people, followed by Cobble's voice saying "Hands where I can see them, lads."

Make a sleight of hand check to hide your hand motions, and then an intimidation check with your intelligence mod instead of charisma.

The booming voice of a half-orc comes from behind the thugs, making them jump and look around. Although they can't see the source of the noise, one shakily puts his hands up, followed by the other, still looking confused.

To be clear, are there only two of them?
Edit: Also, if we rush them now, do we get a surprise round?

There are in fact two. Regarding surprise, you'd have to find out by attacking.
