To me Hydra's go against the spirit of Mafia because when playing mafia you are supposed to be one person trying to convince your co-players of your arguments. How is it fair for one player to have someone to throw ideas off of while another person doesn't?

Then join a hydra? Or don't join a game that has hydras? ~Most~ mods have a limit on hydras?
How many people long for that "past, simpler, and better world," I wonder,
without ever recognizing the truth that perhaps it was they who were simpler and better,
and not the world about them?

I suspect that the question you asked and the question you meant are distinctly different beasts, but... I'll tackle the one you asked regardless.
It's "fair" because there is no actual mechanism preventing any other player from participating in a hydra as well.
Optional benefits (if you believe hydra participation qualifies as a "benefit," many would contend otherwise) are not unfair if they are made easily accessible to all.

Sure, but it's like if you were raised to play football with 11 players, and then someone changes the rules to 20 players. You can say "well everyone can play with 20 players". That doesn't mean that's the way it's meant to be played.
If you don't adapt to the new way the sport is played, then that's your fault not theirs?
I'm not saying it's anyone's fault, but just because there's a new way to play something doesn't make it better. Why not make a seperate type of hydra game just for players that want to play with hydras? That way people that don't aren't restricted to just normal games.

It's not fair, but it makes the game more enjoyable for the hydras themselves!
You should try it sometime, hydras are really easily to abuse if you know how.
