You're looking at it backwards. Pancakes or waffles go with bacon. If I have bacon on hand it's an excuse to eat pancakes. I won't cook pancakes if I have no bacon. And bacon with syrup is just delightful

Also, waffles > pancakes only when they are plain. However, waffles are too thin and scorch on the iron if you load them up with, for example, cocoa puffs and bananas. Also, pancakes are better than waffles if both are cold. But neither is ever better than bacon. Ever.
