But how do you do the three pieces of toast in a (working) two slice toaster?

The same way!
Turn the timer onto half the time you want to toast the bread for.
Pop 1,2 in. Toast.
Take 1 out, put 3 in. Toast.
Taken 2 out, put 1 back in. Toast for a final time.
Now you can enjoy your toast!

That seems like more effort. I'll just do a 4th piece, but cut it into thirds
