One time, back in 'nam, Sudo was set upon by an entire squadron of charlies. He challenged them all to a game of Pictionary, which he won resoundingly. The charlies were forced to not only surrender the skirmish, but also their world-famous chili recipe, which Sudo sold to Texas for a hefty profit. Sudo is a master of diplomacy.

sorry tbone, you need an arm's length of leek, two teacups bacon (do pack it), a foot of the pork meat (ankleless that is), a chair leg of smoked sausage and one pack of split peas.

Sea bass stir-fry


Panicked a little bit when this theme came up - my go-to one-pot dish is what I already used for the signature-dish theme - but I'm glad! It got me to try something that I haven't before, namely the frying of fish. Not complicated overall but, if nothing else, I've learned something from this contest.

Hadn't separated out the amounts at this point - only used a fraction of the cabbage and bean sprouts, as well as only a quarter of the red pepper and about a third of the noodles - but you get the idea.

Chopped everything up, naturally, finishing with the fish. I was aiming to get some satisfying chunks of fish in the finished dish but I chopped them a little too finely and it ended up breaking apart more than I wanted in the stir-fry, with a couple of nice, meaty exceptions.

Fish in first, on a medium heat for four-ish minutes.

Cabbage, pepper, leek, onion and bean sprouts all in.

After two or three minutes, in go the noodles...

Given how unsure I was about getting the fish right, I'm pretty pleased with how this turned out. With a little more refinement on ingredient proportions, it'll be a good regular option to add to my rotation.

Polyhaus' Vietnamese Beef Noodle Soup

Ingredients:

  • Stir-fry beef (or you can get a flank or skirt steak and cut it yourself)
  • Vegetable Oil
  • Bok Choy
  • Beef Broth
  • Chicken Broth
  • Water
  • Rice Noodles
  • Mushrooms
  • Salt
  • Pepper
  • Basil (fresh, if you can)
  • Garlic Powder
  • Bean Sprouts


Instructions:

  1. Cut your steak into bite-sized pieces.

  2. Heat oil in your pot over medium-high heat. Cook the beef until mostly browned. (Leave some pink, as the beef will cook more later.)

  3. Using only the leaves, cut the bok choy into strips. You can use the stems in a different recipe as a less-shitty version of celery!

  4. Remove the beef from the pot, but leave as much liquid as you can in the pot. Wilt the bok choy for about a minute in the beef juices.

  5. Add beef broth, chicken broth, and water to the pot. Use 1 part chicken, 1 part beef, 2 parts water. Also, add salt, pepper, and garlic powder. If you're using dried basil, add it at this point as well.

  6. Once the liquid is boiling, add your rice noodles.

  7. Cut your mushrooms into bite-size chunks. Add them to the pot.

  8. Once the noodles are almost al dente, add the beef into the broth.

  9. Once the beef is cooked through and noodles are done, dole out servings.

We didn't use as much water as we should have, so our broth reduced a lot more than intended. It ended up less like soup and more like a weird lo mein, but it was still delicious! We're also not sure if this technically counts as pho or not, so we're not gonna call it pho, haha.
