New smash looks great

Super Smash Bros. Ultimate
New game (i.e. not just Smash Wii U remade for switch)
EVERY fighter from every previous Smash game returns, including DLC-only characters from 4 and non-returners in previous games (e.g. Snake, Young Link, Ice Climbers...)
This includes Pokémon Trainer from Brawl (which no longer has fatigue for the Pokémon so you can just play one for as long as you want)
Link based on BoTW, Zelda appearance based on Link Between Worlds, Ganondorf based off OoT
Many final smashes are changed to be more quick and to the point (including the apparent total loss of transformation-based final smashes)
Lots and lots of returning stages (good or bad? Idk, depends if they have a lot of new too), new stages including Great Plateau Tower (BotW) and some tall building from Splatoon
New characters include Inkling, Daisy (Peach clone - largely clone characters referred to as "Echo characters" e.g. Dark Pit and Lucina), Ridley

Donkey Kong Tropical Freeze is a good co-op game that will have you both on equal footing, Mario Odyssey is better overall but the co-op consists of one person controlling Mario and one helping them by controlling the hat.

Mario Kart 8 Deluxe is great

If you did have one

Mario and Rabbids is a good co-op strategy (XCom style) game

If you don't mind trading off a single player game there's The Legend of Zelda: Breath of the Wild, Mario Odyssey or Splatoon 2

Snipperclips does look fun! Probably won’t be our first purchase but maybe second or third!

We’re definitely looking for something we can play together. Maybe Mario Odyssey would work, since she’s a bit more casual than me?

I know we’d both like Mario Kart, but I’m worried about it getting boring/repetitive too fast. Anything unique about this version in that regard?

Donkey Kong! Fun! Haven’t played a DK game in years. On the list of options for sure.

Strategy isn’t her thing (though I’ll probably get Rabbids for myself at some point)

DKC Tropical Freeze gets relatively tough towards the end, maybe not great if she's casual.

MK8 is really fun and won't get boring, it's really pretty visually and the underwater/flying/antigrav sections add a lot of variety. 48 courses too which adds a lot.

Mario Odyssey is very asymmetric multiplayer, I'd recommend looking up exactly what it's like to see if you'd enjoy it if multiplayer is important.

That's pretty much what I was politely getting at but yeeaah it's the kind of multiplayer where one player actually plays the game while the other can vaguely feel like they're doing something (and it also affects the camera controls for player one in a bad way making the game a bit more slow and irritating).

Honestly Snipperclips seems like the most appropriate? If she's more casual (i.e. wouldn't enjoy the difficulty of some of the later Donkey Kong levels) but you want a co-op game.

Mario Kart 8 would be my recommendation if you want a more competitive experience.
