Emulator-wise: I've been playing Super Mario 64 and The Elder Scrolls: Arena. Mario is fun, but I really suck with controllers. I've been trying to set up a SNES emulator, haven't figured it out yet though.
Oh! I almost forgot! Most of you have probably played this at some point, but those who haven't must!

you NEED resist fire/shock and Heal at later levels, and it's incredibly difficult without Levitate.
so you're stuck bringing along a shitload of potions
and that still leaves you without Light, Open, and Passwall
so you need to seek out specific enchanted equipment if you don't want to have a hard time
good luck with that
and God help you if you run out of potions
or your equipment runs out of charge
and what do you get in return?
a few more AC points (which don't protect from magic) health (which allows you to survive another split second against casters) and weapon damage (have fun trying to get in range before you're roasted)
I started out as a Warrior, then switched to Bard when I installed the CD version
best thing that happened to me
Bard can cast all of the above spells at a decent level
OK weapon damage
P good armour
Critical hits
at low levels they're kind of weak but by the time you're in the teens you can spam heals all damn day, spit out enough crits to make melee a bore, and have enough spell points to cast pretty much anything you'll need.

*shrug* there's always the 'carry 150 pots' potion, but it feels like cheating.
For stealing, I'm pretty sure you're thinking Daggerfall. It's really tough to make stealing a viable source of income since you can't save in shops.
@ Om: Arena/Daggerfall are good if you haven't played them. Otherwise, just download an emulator, Google for some ROMs and try shit out. I bought Rayman from GOG. It's really tough, don't get me wrong, but it's tough because of good design, not bad design. It's usually extremely easy to figure out where to go, what you did wrong, etc. A nice break from games that depend on ambiguity for fake difficulty.I'll explain it to you.
