en passant is easy. I think I should explain you why it is a rule to make it easier to understand. Back in the day, there was no 2 square first pawn move, pawns could move only 1 square at a time, it was introduced in 1600s or 1800s, I can't remember exactly. So, in old days, pawn couldn't escape opponents paws with 2-square move and to preserve this they introduced en passant. To make it simple, en passant only applies to white pawns in 5th rank and black pawns in 4th rank and only right after 2-sqaure move. If you don't take right a way, you lose right for en passant. For example you have a pawn on e5 as white, I play d7-d5, you can take my pawn as if I make d7-d6 move and not d7-d5 and your pawn ends on d6. I hope that explain it to you

Or you can remember it other way - if pawn makes 2-square move and is right next to your pawn, you can take it

I can guess what you're doing, but thing is that it takes few moves to bring knight back to the game from sidelines, when your idea doesn't work
