IIUC it's not exactly a cap, it's just the point where diminishing returns mean it's not worthwhile stacking any more of that stat.
There's some example math here that I don't totally understand, but that's out of date by two years anyway; I don't know what current figures are, nor which stats are best to focus on, but I'm only level 64 now so I don't think I need to optimise yet myself.

So, got a new tanking trinket, two dudes from another server tried to ninja it from me, the trinket was useless to their class, then they kicked me from group (gorgonmash or something) anyhow my need roll won, and I got it then a second later got booted, so I made a char on their server and called them cunts.. lol

Mitgation > stam. Are you dodge/parry capped, are you blockcapped? And are you a DK, warrior, druid, or pally?
Wait mitigation is the new tanking stat? I know for a long time that stamina gave the highest effective health (Right behind bonus armor of course).
Also dodge is still better than parry, correct? (Since parry resets the swingtimer for the boss and your toon that parried, it pretty much gives a reroll on the attack unless it's been changed)

I think dodge and parry are the same now, could be wrong on that. I'm sitting at around 14% on both (more with self-buff), when my trinket procs I am close to 16% on dodge (procs whenever I parry and gives me an insane dodge boost for 12 seconds) and procs about once per min.

Parry doesn't reset swingtimers anymore.
Mitigation is superior, you simply don't have the spikiness of damage that made stacking stam necessary, avoiding and thereby conserving healer mana helps more.
