I'm thinking of modding a semi-open setup that might go sthg like this

67% chance sane cop, 33% insane cop
33% townie, 33% naive cop, 33% paranoid cop
50% townie, 50% doc
50% vig, 50% sk
50% townie, 50% psychiatrist
33% town lover pair, 33% masons both town, 33% masons one is scum
50% town rb, 50% one of the scum is rb
50% mafia gf, 50% mafia framer

etc. That sort of formulation. I'd love to work in all kinds of stuff like tracker, devil, survivor, lyncher, traitor... But I don't want to create situations like "oh we lynched the devil, that means there's no lyncher or survivor."

Can you think of any cool stuff that I didn't think of?

Although I have some concern about combining sanity with mafia alignment manipulation abilities, I think it's ok for mafia to have either a gf or a framer other things being equal.

SEAG: Small, Elderly, Asian, Gardner.

NOT a PGO who is UNNKable.
If he is targeted for a NK, he kills the Player who targeted him instead. That other player can only survive if he was protected by a doc. A doctor choosing to protect the SEAG will have no effect. The SEAG is so modest he thinks that he really is just a vanilla townie. (He receives the vanilla townie PM) He also wins with the town.

The adapter prevents its nightly target from being killed overnight. Additionally, a successful protection grants the town an extra lynchblock, which is announced after they've finished their first one. The adapter may not protect itself. Scum no-killing doesn't grant another lynch.

(Generally, the point of a doctor is to deter the scum from targeting specific people; here, the adapter aims to actually stop kills. So I'm not sure about the ideal ratio here.)
