You get 3 cards
You get an alignment out of 1 card
You get a role out of another
You discard the third
There are many alignments, not just two. See the wiki page.

I think these set-ups were initially created for meets, where they want to play a lot of different games, but didn't want to have to worry about making a new set-up from scratch each time.

You're right-ish. We created Great Idea at a meet because it was funny. We created Greater Idea at another meet because it was funnier. Then we created Greatest Idea at another meet because it was funnier. The varied setups were a bonus.
